Summer is here and the steaks are ready to grill, the only problem is that you don't know exactly what type of barbeque grill to buy. There are many questions that need to be asked when buying a grill. Things such as cost, ease of use, other uses besides grilling, flavor and portability should be considered. The most important item in this list depends on what you want. This article looks in detail at the different categories and makes a judgment on which grills would be best in that category, charcoal, propane, natural gas or smokers.



If cost is the main factor, the grill to go for is charcoal. They start at .00 for a small, basic unit and only .00 for a standard 22" kettle grill. Propane grills are the next lowest in price, starting at around 0.00 for a basic unit. A small smoker starts at around 0.00. Since natural gas grills are supposed to be hooked to a home's gas line, they tend to be larger units, and more expensive starting around 0.00. Ease of Use

The easiest grill to use is probably the natural gas grill. It is hooked to your homes natural gas line and therefore doesn't require you to buy large propane tanks on a regular basis. Getting a grill that has a battery powered or electric starter makes things even easier. Propane is probably the next easiest to use since there are no charcoal briquettes or wood chips to worry about. While it seems that a larger grill is a better grill, remember that larger also means a larger area to clean.

Additional Features

Natural gas or propane grills can offer additional cook spaces that a charcoal or smoker unit cannot. If you plan to cook full meals on your grill, gas burners and a warming tray come in handy. A rotisserie option may also be important to you depending on what you want to grill.


If flavor is the most important item on your list, a smoker or a charcoal grill should be your first priority. Smokers are meant to slow cook over time and impart a smoky flavor to meats. You can choose the type of wood to smoke that will give you the flavor you are looking for. The only problem with a smoker is when you want a quick pork chop or hamburger, it isn't so quick. Consider a gas grill for quicker cook meals and a smoker when you really want to impress the neighbors. Charcoal is the next best in the flavor department with no gas undertone. Gas grills can also impart a good grilled flavor, and now many gas grills have a smoker option on them.


When portability is the most imporant requirement, propane is the way to go. Charcoal grills run a close second. Small propane tanks make it easy to take your grill camping or to a tailgate party and you aren't left wondering where to put the smoldering coals. Charcoal can work and there are several small portable units available; just make sure you have a plan for what to do with the used briquettes.

It's easy to make mouth watering, fall off the bone pork ribs when you're cooking with a crock pot. Slow Cooked Barbecue Ribs

What you need:

• 3 lbs baby back pork ribs
• 1 regular size bottle barbecue sauce (10 -15 oz)
• 1 large onion, sliced
barbecue rub

What you do:

• Cut ribs into serving size pieces, but small enough to fit in your crockpot. Rub ribs thoroughly with barbecue rub. Broil for 10-15 minutes. Ribs should be nicely seared, but not blackened or charred.

• Put ribs over the onion in a 4-6 quart crock-pot. Pour barbecue sauce over the ribs. Cover and cook on low for 6-9 hours. Ribs should be falling off the bone when done.

Crock Pot Asian Spareribs

What you need:

• 4 lbs pork spareribs
• 3 garlic cloves, minced
• 3/4 c beef broth
• 1/3 c soy sauce
• 1/4 c ketchup
• 1/4 c honey
• 1 medium onion, sliced
• 1 t salt
• 1/2 t black pepper
• red pepper flakes or chili paste per taste (optional)

What you do:

• Place ribs in an airtight container and cover with onions. Combine remaining ingredients in a bowl and mix. Pour mixture over ribs and place in refrigerator for 4-8 hours, turning ribs in marinade at least one time.

• Place ribs under broiler for 10-15 minutes and broil. Ribs should be nicely seared, but not blackened or charred. Add ribs, onion and marinade to the crockpot. Cook on low for 8-10 hours.

• May add some chili paste or red pepper flakes to marinade for a spicier version.

Crock pot or slow cooker heating temperatures may widely vary per model. To ensure proper cooking, make sure you leave the cover on the crock pot. Removing the cover for even a little bit releases all the heat trapped inside and adds cooking time to your meal.

How to Make Curry Wings

This is a delicious dish that my mother used to make for me when I was a kid, and I have loved it ever since because it mixes my two favorite ingredients, chicken and curry. It is really simple to do and it's delicious especially if you eat it right after you let it sit for a bit. Here is how to make curry wings.

The ingredients that you will need for curry chicken are: chicken wings (thighs are okay to use too), curry powder, cooking oil, condensed milk, paprika, and some salt.


First, take your chicken wings and wash them and take off some of the excess skin. Then get a medium-large wok and add some cooking oil and heat it up.

Once the oil is heated, add in the chicken and take them out as soon as they are fully done.

Once the chicken is done cooking, either grab another wok or wash out the previous one and put the wok on medium heat as you add the condensed milk, curry powder, salt, and paprika. After the mixture has boiled down a bit, add in the cooked chicken. Lather the chicken continuously until the mixture shrinks down to nothing and the chicken is fully covered by the curry mixture.

Now it's ready to serve. Simply move it to a decorative plate, add some topping to finish it off, and you're done. Like I said, it's an incredibly easy dish to make so anyone can try to make it . Hope you have fun and enjoy this dish as much as I do.

Plank Opakapaka with Stir Fry Vegetables, Sesame Noodles & Grilled Pineapple

This is a fun way to make a Hawaiian Style BBQ at home. The Planked Opakapaka, stir fried vegetables & grilled pineapple are offset with the chilled sesame noodles. This is a easy way to entertain on a warm end of summer day!



Opakapaka Fillets (6/7oz, or 12/14oz)

Tom Douglas Peri Peri Rub


Soba Noodles or thin Spaghetti

Mixed Vegetables for Sir Fry

Soy Sauce

Sesame Seeds

Green Onions

Freshly Ground Black Pepper

Olive Oil

Alder or Cedar Grill Plank

Preparing the Plank:

Remove the plank from the plastic wrap.

Place the plank in a sink, clean dish tub or pot & fill with water.

Place something heavy on the plank to completely submerge it in the water.

Soak the plank for a minimum of 1 hour, but overnight or all day is best if you want to re-use the plank the maximum number of times.

Prep Time (15-20 Minutes)

Thaw the Opakapaka Fillets in the refrigerator overnight or run under cold water to thaw.

In a mixing bowl, place 2 tsp of Tom Douglas Peri Peri Rub & 3-4 tbsp of Olive oil. Mix together.

Remove the Opakapaka Fillets from the package & place on a plate skin side down.

With a knife, score the fillets at a 45 degree angle every ½ inch.

Coat the meat side of the Opakapaka Fillets with the Tom Douglas Peri Peri Rub & Olive Oil. We use a basting brush.

Cook your Soba Noodles or thin Spaghetti in boiling water. If using Thin Spaghetti, add Soy Sauce to the boiling water instead of salt before placing the pasta in the water. Cook al dente. Rinse the noodles & toss with sesame oil & sesame seeds.

Slice the green onions thinly and toss with the pasta. Refrigerate

Chop your vegetables to sauté with olive oil and or your favorite stir fry sauce.

Slice your Pineapple into 3/8 inch cross sections & lightly sprinkle with brown sugar or Peri Peri Rub (Sweet or Spicy Sweet)

Cooking Time: (10-15 Minutes)

Pre-heat your BBQ. If charcoal, place the fire to one side. If gas, light both burners on high for 10 minutes.

Place the Grill Plank on the hot coals side of the BBQ for 5 minutes or until it begins to smoke or directly over one burner on the gas BBQ until smoking.

Move the Grill Plank to the indirect heat side of the Charcoal grill or turn off the burner on the gas grill under the plank. Drizzle a small amount of olive oil on the Grill Plank.

Place the Opakapaka Fillets skin side down on the Grill Plank & close BBQ lid. The Opakapaka will be ready when there are white lines through the fillets & they have become flakey when touched with a fork. Do not overcook! The fillets will still be cooking when you remove them from the plank.

Place the Pineapple rounds on the grill after the Opakapaka has been cooking for 7-8 minutes. spice/brown sugar side down, turn in 2 or 3 minutes, then remove 2 or 3 minutes later.

Saute your vegetables with olive oil and or your favorite stir fry sauce.

For oven cooking, just pre-heat the oven to 350 degrees. With the Grill Plank on the rack.


Remove the Cooked Opakapaka Fillets from the plank, moving the directly to the plate.

Remove Pineapple rounds from grill & place on the plate.

Turn off the BBQ.

Place the Plank in cold water to extinguish. (The Plank is generally good for up to 5 "firings")

Add your Stir Fry Vegetables to the plate.

Add the Sesame Noodles to the plate.

How Long Do You Grill Boneless Chicken Breasts

Boneless Skinless Chicken Breast are the most expensive cuts of the chicken, but are worth it for many people because of the relative ease of prepping, cooking, and eating. Skinless chicken breast are also low in fat and high in protein. Care must be taken when cooking or the meat can become very dry in a short time.



1. Make sure that the chicken has been rinsed completely before cooking, unless the chicken is soaking in a marinade. Pounding the chicken breast will make it uniform in thickness and easier to cook.

2. Pre-heat the grill on med-high to high and lay the chicken breast on the grill. A hotter temperature will cook faster and sear in the juice if grilled correctly.

3. Grill for approx. 4-5 minutes checking frequently to insure the chicken is not burning. The chicken is ready to turn when the bottom side has clear sear marks and the top still is pink.

4. Grill the chicken for another 4-5 minutes or until done cooking. Firmly touch the chicken at the thickest point to see if done. If overcooked the chicken will feel hard without any give. If undercooked it will feel a little squishy. If cooked right it should have a little spring back.

5. If you are unsure if the chicken is cooked enough you can make a small cut into the thickest part of the chicken. If the center is still translucent then it needs more cook time. The chicken will continue cooking after it is taken off the grill. This is when most people overcook, because they remove the chicken too late from the grill. Once it has cooked completely through it will start drying very fast. Most cooks will remove the chicken just before the center is cooked. Be careful with this in that you do not leave the center raw.

6. Remove from grill and serve. Now is a great time to add your favorite sauce. You can apply the sauce during cooking to make a tasty glaze if you want.

Safe Internal Temperature: 165 degrees


* Chicken sticks very easy to a hot clean grill. To minimize sticking, lay the side of the chicken that had skin on the grill first. This will also insure much better sear marks. You can also lightly coat the outside of the chicken with oil or spray oil. Some people even use oil on the grill bars before placing on the chicken.

* Grilling the chicken too long on one side before turning will dry the chicken. Signs of grilling too long on one side are the raw topside turns white and the edges curl up.

What's the perfect accompaniment to your grilled steak? A baked potato, of course! If you associate baking a potato with an oven, then think again. Baking potatoes on the grill alongside your meat creates an easy meal option that lets you stay outside and avoid heating up the kitchen.   


Baking potatoes on your gas grill is so easy that anyone can do it.  In fact, gas grills are ideal for cooking potatoes because the heat is so even. Whether you're a traditional potato eater who likes a steaming baked potato with sour cream, or you're a potato skin lover who likes to score presentation points, you'll be able to grill your potatoes with ease.  

Here are two simple options for flawless grilled potatoes. 

Option 1: The Traditional Whole Potato 

  • After thoroughly washing the potatoes, spread a thin layer of cooking oil on aluminum foil. Use about 1 tbsp. for each potato.   The oil will help keep the potato moist.  If you're feeling adventurous, try adding some spices or herbs to the oil. For example, you can sprinkle some garlic and pepper or a little cayenne pepper as you spread the oil evenly across the foil.  
  • Wrap each potato individually in the aluminum foil.  
  • Put the grill on low heat.  You might want to start baking the potatoes before you cook the rest of your meal.  They will stay hot for several minutes wrapped in the foil.  You can also microwave them ahead of time to reduce cooking time. If you do choose to microwave, be sure to poke holes in the potatoes with a fork.  
  • You can place the potatoes anywhere on the grill, but avoid the hottest part.  The top rack is the most convenient place, reserving the main shelf for your meat.  
  • Cook for approximately 45 minutes, turning occasionally. Cook with the lid closed. Potatoes are done when a fork is easily inserted into the center, or they feel slightly soft when squeezed. Do not overcook.

Option 2: Crispy Potato Halves 

If you're interested in a prettier presentation, faster cook time, and crispy skins, try these simple steps: 

  • Slice the potatoes in two, lengthwise.  
  • Score the tops of the potatoes to create a grid pattern that makes a nice presentation and speeds grill cooking time.   
  • Brush the tops of the potatoes with cooking oil. Sprinkle seasonings (herbs, spices, salt, pepper, etc.) to taste.  Place skinside down on the top shelf of the grill.  
  • Cook for about 30 minutes. 
Follow these easy steps to bake a traditional foil wrapped potato, or a crispy open-faced potato.  Try both recipes for variety. Either way, you'll create a tasty side dish that will complement your steak, chicken, or other meat.  Throw your vegetables on the grill, too, and you'll have a perfect meal all cooked in one place with easy clean-up.

Finally, the third option is to build your own oil drum pig roaster. For anyone with a few tools and a little space to work, this is a great option. Any steel container will do, old gas cylinders and beer kegs can also be used, but by far the most popular is the standard 55 gallon oil drum.

Getting this right is all in the design and pre-planning. At the same time it's important not to get too hung up on the details, you'll be most likely working with old scrap materials, so inch perfect dimensioning isn't too important, you just have to make sure you understand broadly what your doing before you start cutting, then just get stuck in.
