Great barbecued chicken, with moist, tender succulent meat and sticky smoky skin, is made by cooking over low heat using a grill. You can get a great depth of flavour by using a spicy barbeque rub on the chicken before grilling. Salt and pepper can also be used in the same way. Salt will aid in keeping the moisture in the chicken while grilling and pepper will add to the aroma and bite.

Preparing the charcoal

A grilling temperature between 230° and 250°F, is optimal, to achieve this, stack charcoal in a pile in the centre of grill. Douse with lighter fluid and let it soak in. Light and leave it alone until grey ash has covered all visible charcoal. Spread out charcoal into an even layer and when it has an even layer of ash approximately 1/2 the depth of a charcoal briquette you are ready to grill. The actual grill should be at about 4 or 5 inches above the coals.

Cooking

Slowly cook the chicken until internal temperature is approximately 170 degrees and then add a BBQ sauce of your choice. Cook for another 5 minutes to allow the sauce to stick to the chicken and then remove from the heat.

Put the oil in the frying pan and turn the stove to medium heat while you season your chicken.

Put a little bit of salt all over the chicken and let it stand for about 10 minutes; the salt opens the holes in the skin of the chicken and will allow the other seasonings to permeate.

Sprinkle enough, but not too much, of each listed seasoning over the chicken.

Put some flour inside a medium sized bowl and add a little bit of each of the seasonings (also sprinkle with some grated almonds). Make sure that there is enough flour in the bowl to coat all the chicken pieces.

Check to make sure that the oil in the frying pan is hot and dip your chicken into the flour, covering it all over, then transfer it into the frying pan.

Let the chicken cook in the oil until it is golden brown all over, then poke a fork through the chicken to see if it's cooked, there shouldn't be any pink coloured meat and the juices should run clear.

Mix the BBQ sauce and honey together in a medium-sized bowl.

Preheat the oven. Take the chicken out of the pan and put it into the Honey BBQ sauce, then put it in the oven on a baking pan for about 6-8 minutes. Then serve.

The brine mixture is made by combining half a cup of brown sugar, half cup of salt, 2 tablespoons of vinegar and 8 cups of water. Mix ingredients together and place chicken breasts in, this brine mixture is enough for 4 chicken breasts.

Place the brine bowl with the breast into the fridge and leave for at least 30 minutes but no longer than an hour.

Take the chicken out and sprinkle over your favourite chicken seasoning. Add a bit of lemon juice and some spices.

Barbecuing

Pre-heat your grill to a medium heat and lightly oil grid with olive oil or cooking spay. Once the chicken has finished brining and seasoning it must be grilled straight away.

Grilling time is really short, 2 - 3 minutes on each side because the breasts are now even. Breasts should only be flipped once and the grill lid needs to be closed to create an oven like effect.

The chicken has to be pre-cooked by pre-baking. The ideal temperature for baking it is 360 degrees in the oven until partially cooked. This will seal in flavors and will ensure that the chicken has been cooked before it goes to the grill. Others do boiling. However, boiling takes away the flavor and makes it taste weak.

Step 6:
Now the grill has to be made ready while the chicken is baking. If a charcoal grill is being used, ignite the coals and they should be left to burn until a white coating of ash appears on the coals. In case of gas grill, it has to be preheated to a medium heat temperature of 360 degrees. The grate also has to be sprayed.

Step 7:
Put the seasoned chicken on the rack and cover it with the grill lid. It should be given at least half an hour to cook. With time, it has to be checked and turned after every five minutes for ensuring that it is evenly cooked. The pieces can also be rotated to balance the cool and hot spots on the grill.

Step 8:
The BBQ has to be glazed again with the seasoning nearly 10 minutes before taking chicken off the grill.

Step 9:
After grilling, the chicken pieces can be checked with a meat thermometer. The bone should be never touched when the thermometer is inserted. The internal temperature of the meat must be 175 degrees.

Step 10:

Place a drip pan with about 1/2 inch of water on the grill to catch excess fat and prevent flare ups and to add moisture to the roasting chicken. 5. If you are unsure if the chicken is cooked enough you can make a small cut into the thickest part of the chicken. If the center is still translucent then it needs more cook time. The chicken will continue cooking after it is taken off the grill. This is when most people overcook, because they remove the chicken too late from the grill. Once it has cooked completely through it will start drying very fast. Most cooks will remove the chicken just before the center is cooked. Be careful with this in that you do not leave the center raw.

6. Remove from grill and serve. Now is a great time to add your favorite sauce. You can apply the sauce during cooking to make a tasty glaze if you want.

How to Cook Chicken Legs on the Grill

Grilled chicken legs are not only a delicious summer meal, but they are also economical as legs are one of the cheapest parts of the chicken. Just because they are cheap, does not mean they have to lack in flavor. Actually, the dark meat of poultry has more flavor as it contains more fat.

One of the biggest problems grilling enthusiasts face however is with cooking times and temperatures. One of the most frequently asked questions is: how long do you grill chicken legs?

It really isn't possible to give an exact answer to this question as it really depends on the type of grill you are using, the grilling method and how big the chicken legs are.

It really is an excellent idea to invest in a good quality cooking thermometer. I personally own a voice alert electronic thermometer. It really is a fantastic little cooking gadget and I would be lost without it. It is extremely accurate and eliminates all guessing, and guessing is not an option when cooking meat, especially chicken.

CHICKEN GRILLING METHODS

Boil the Chicken Legs First

The goal with this method is to cook the meat all the way through before it goes on the grill. This greatly reduces the risk of any food born illnesses and also cuts down the grilling time significantly. The downside to this method is a serious lack of flavor. Since you will be cooking the meat on the grill for a much shorter period of time, the meat will not have a chance to pick up that delicious grilled flavor.

Marinate Then Grill

Marinating your chicken legs first is always a good idea. Not only does it give your food a fantastic flavor, but it also keeps the meat moist during the cooking process. For the best results, marinate the chicken over night. Below is an excellent marinade that I use often and it is quite versatile. It works well with seafood like shrimp and scallops as well.

Citrus Herb Marinade

Ingredients:

4 Chicken Legs

1/4 Cup of Extra Virgin Olive Oil

2 1/2 Tablespoons of Fresh Lemon Juice

1 1/2 Tablespoons Fresh Orange Juice

1/3 Cup of Freshly Chopped Parsley

1/3 Cup Freshly Chopped Cilantro

2 Cloves of Garlic Minced

1 Teaspoon of Salt

1/4 Teaspoon of Freshly Cracked Black Pepper

Directions:

In a large bowl, mix together all ingredients except the chicken legs. Add chicken to the bowl with the marinade and toss to coat. Refrigerate for several hours, over night if possible.

Let's Start Grilling!

I have found that the best method for cooking chicken legs on the grill is to first sear the meat and then finish the cooking process over indirect heat. The result is a nice moist chicken leg with a delightfully crispy skin.

Step 1: Remove chicken from marinade and rinse. This is to remove any ingredients from the marinade that are stuck to the chicken. If left on, this can burn. Coat the chicken with some oil to prevent it from sticking to the grill.

Step 2: Clean the grill. The best method for cleaning a grill is to turn the grill up high and allow the heat to burn off any grease and grime. Use your grill brush to scrape the grates clean. For charcoal grills, just light up the charcoal and allow the fire to heat up the grates and scrape the grates clean.

Step 3: Heat the Grill. We are going to set up our grill for the searing/indirect cooking method. For gas grills, this is pretty easy. All you do is turn one burner up high and leave the others off. For charcoal grills, it is a little more involved, but not rocket science. All you do once your charcoal is ready, is push all of your charcoal over to one side leaving half of the grill without charcoal. The side with charcoal is for searing and the other side is for the indirect cooking.

Step 4: Begin Cooking. Once your grill is good and hot, go ahead and put your chicken legs on the hot part of the grill and sear on all sides. Only sear your legs for a few minutes per side. You are looking for a nice sear, so avoid burning the skin. After you sear them, go ahead and move them on over to the cool side of the grill and cover.

Let them cook for a good 20 minutes and then get out your basting sauce. If you used the citrus herb marinade from above, try and find a thick basting sauce that compliments the citrus flavors. Baste the legs on all sides and then cover. After another 20 minutes or so, using your thermometer, go ahead and check to see if the legs are done. You are looking for an internal temperature of 165 degrees Fahrenheit.

Once the legs are done, If they aren't as crispy as you like, put them on the hot side of the grill again for a few minutes before removing them from the grill.

Coke or Beer Can BBQ Chicken

Ingredients:

Bbq Recipe

1 teaspoon dry mustard

1 teaspoon granulated onion

1 teaspoon paprika

1 teaspoon kosher salt

1 teaspoon garlic powder

1 teaspoon freshly ground black pepper

1 whole chicken, 4 to 5 pounds

2 teaspoons vegetable oil

1 can (12 ounces) Coke or Beer

Instructions:

Combine all the above ingredients except the chicken, vegetable oil and coke or beer.
Remove and throw away the neck, giblets, and any extra fat off the chicken. Rinse the chicken, inside and out, under cold water and pat dry with paper towels. Spray with cooking spray or brush all over with the vegetable oil and season, inside and out, with the rub.

Open the Coke or Beer can and pour off about ⅓ of the Coke or Beer. Set the partially emptied can on a flat surface and place the chicken over the top so the can fits inside the cavity of the chicken. Move the chicken to the grill, keeping the can upright. Carefully balance the chicken over the Coke or Beer can. Grill over Indirect Medium heat until the juices run clear and the internal temperature reaches 170°F in the breast and 180°F in the thickest part of the thigh, 1-1/4 to 1-1/2 hours. Either wear oven mitts or grab two oven pads, carefully remove the chicken and the can from the grill, and be careful not to spill the Coke or Beer because it will be hot and could burn you. Let the chicken rest for about 10 minutes before lifting it from the can. Discard the Coke or Beer. Cut the chicken up to your desire and right away.

Serves 4 to 6

Note: For a sweeter chicken use Coke.

How Long Do You Grill Chicken Legs and Thighs?

Chicken Legs and Thighs are the most eaten parts of the chicken, and for good reason since they are cheap to buy and easy to cook. But mostly because they are juicy, taste great, and have a built in handle.

2. Pre-heat the grill on med (240 degrees) and place the legs/thighs on the grill. Legs/thighs grill much better at a lower temperature for a longer period of time.

3. Frequent turning of the legs/thighs will insure a more even cooking, but will prevent any clear sear marks.

4. Legs/thighs come in so many sizes that it is hard to say exactly how long to cook in minutes. Start by letting the bottom side cook to a golden brown before turning. Continue turning as each side browns. If the outside is browning in only a minute or two than the heat is probably up to high and the outside will burn before the inside is cooked.

5. If juices are coming out of the chicken then you have cooked it through and it may start to become dry if allowed to cook much longer. You can make a small cut in the chicken at the thickest point to see if it is still pink in the middle. It is preferable to not make any cuts though, because this will break the seal and allow the juices to escape making the chicken dry.

6. Remove the chicken from the grill and allow to cool a little before eating. This would be a good time to brush on your favorite sauce.

Safe Internal Temperature: 165 degrees

Tips:

* Grilling legs/thighs at too high a temperature will burn the outside of the chicken without cooking all the way through to the inside.

* Grilling legs/thighs at too low temperature may prevent the outside from getting brown and crispy. The chicken may also be dry.

* Be careful if you brush bbq sauce on while cooking. The chicken may burn easier and flavor the chicken with a burnt charcoal taste.

* To get the full flavor of the bbq sauce wait until the legs/thighs are done cooking and then brush on the sauce.

What is the Best BBQ Chicken Recipe?

BBQ chicken has got to be one of the most enjoyed meats in the history of food and BBQ in particular. Chicken is usually cheap, quite filling, a great source of protein and easy to cook whether on a BBQ grill, smoker or even a regular oven. While there are lots of BBQ chicken recipes for you to enjoy with your friends and family at your next BBQ, some definitely stand out as being universally liked and applauded.

Usually a good chicken recipe will include ingredients such as ketchup, mustard, garlic, cumin and many others. One popular recipe even calls for a can of beer. Several Asian variations make use of soy sauce, honey, Hoisin sauce and ginger. Many recipes call for sugar, cinnamon and Worcestershire sauce.

As you can see the flexibility and variation is quite broad and what it usually boils down to is personal preference. But, some recipes stand out. One such recipe is was featured on Paula Deen's show 'Paula's Home Cooking.' It's called 'The Deen's Brothers BBQ Chicken' which can be cooked in the oven or on the grill and includes the following ingredients:

  • 1 cup ketchup
  • 1/4 cup packed dark brown sugar
  • 2 tablespoons orange juice
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon liquid smoke
  • 1/2 teaspoon dry mustard powder
  • 1/4 teaspoon cayenne pepper
  • 1 (3 1/2-pound) chicken, cut into 8 pieces

Preparation is fairly simple. You need to first preheat the oven to 375F or prepare the grill by brushing it will olive oil. Mix together all the ingredients in a large bowl (except for the chicken) and save 1/3 cup of the bbq sauce for later. Now add the chicken to the remaining sauce in the bowl and make sure it's nicely coated. Place the coated chicken on the grill (covered) or on a roasting panand cook for 40 to 45 minutes or until cooked through, using the reserved 1/3 cup sauce to baste the chicken after about 20 minutes.

What I like about this BBQ chicken recipe is that it is a complete no-brainer. The only tricky part for me was figuring out what 'liquid smoke' is. But a quick Wikipedia search explains what it is and how it's made. Basically, it gives the BBQ sauce its smoky flavor without having to smoke the chicken (which could be a long and complicated procedure). You can do choose not to use this if you don't like the smell or flavor.

One change that I personally make to this recipe is that I just use chicken thighs instead of a whole chicken. I think chicken thighs are especially juicy and cook faster than other parts of the chicken, so you can get to eating instead of waiting for the whole chicken to cook.
